Jean Bouillot was a wine and spirits merchant, one of the few of his day to specialize in Cremant de Bourgogne, Burgundy's methode traditionnelle sparkling wine. Blanc de Blancs is a petulant wine from white grapes, almost exclusively Chardonnay with a minor component of Aligote from Maconnais, Yonne and Châtillonais, vinified to true Methode Traditionelle. Parcels are treated to a pneumatic press, which crushes the fruit before undergoing fermentation in tanks followed by bottling. Louis Bouillot Blanc De Blancs is naturally fermented and matured twenty four months in its own bottle, achieving maximum aromatic qualities and finesse imparted by time spent on sedimentery yeast lees. Alcohol 12.0%
Bright straw yellow colour with tinges of green. Its herbaceous nose and soft citrus notes mingle with the fragrance of fresh, dewey grass and scents of freshly opened nuts. Exhibiting the structure of Mâconnais alongside the vivacity and freshness of Yonne, the mouth is crisp with mouthfilling acidity, beautifully expressed like the character of a pink grapefruit.
